OUR 13TH NPR MARKETPLACE MOMENT — THE MAGIC THAT HAPPENS WHEN PEOPLE CARE

FROM AIRWAVES TO ORDERS

The Day the Village Showed Up

After taking today to pause and reflect, I knew I needed to write this message — from my heart to yours.

On February 11, my 13th interview with Kai Ryssdal on NPR’s Marketplace aired. When they reached out, it was meant to be a usual check-in, this one about how the recent Thanksgiving/Christmas holiday season went.

As most of you now know, it wasn’t our strongest season.

I had taken a leap of faith and tried something new — a holiday kiosk. It was a big risk. It didn’t work the way I had hoped. It was a TON of work and we barely/almost broke even. And if I’m being honest, I was still licking my wounds and trying to get my mindset right for the new year.

I understand that not everything I try is going to succeed.

I was very reluctant to be vulnerable on air. I never want to sound like a victim. I don’t want to be negative. I certainly don’t want anyone feeling sorry for me. That’s just not who I am.

But my friends at Marketplace encouraged me to be honest. So I was. I shared the unfortunate details.

.

And what happened next is something I will never forget for as long as I live.

Around 3:30pm that same Wednesday, while the story was airing, the orders began coming in. I was delivering to the University of Utah when I received my first phone call from a new customer. He said he had just heard me on Marketplace and wanted to place an order.

And then another came.

And another.

Over Wednesday, Thursday, and Friday — the days immediately following the interview — we received over 100 orders from all across the country, from Maine to Hawaii.

But it wasn’t just the orders.

It was the messages.

“I heard your story on NPR, I hope you sell tons. Good luck!!”

“I heard about your company on Marketplace this evening. It was clear to me that yours is a business I would like to support — AND that you make great baklava.”

“Just heard your story on NPR and I can’t wait to support your business!”

“Cara (means Dear) Rita — I’ve been following you and cheering for you from the 1st time Kai profiled you on Marketplace. Sounds like from tonight’s update that you’ve had a few speed bumps. Just go, girl! Happy Galentines!”

There were so many loving, kind notes attached to your orders.

I have never cried so many good tears reading messages from complete strangers.

Thank you.

Thank you.

Thank you.

I decided I wasn’t going home that first night. And I didn’t go home Thursday night either. I was so filled with gratitude and adrenaline that I just wanted to work and get your orders out. Besides, I still have my makeshift cot here at the bakery for emergency naps.

Many of you were ordering for Valentine’s Day, which was just days away. I knew I might not get every package there by the holiday itself because the cut off date for the post office had already passed, but I was determined to do my very best to get them to you as quickly as possible.

Thursday morning, I mobilized the team.

Haneen.

Iqbal.

Desi.

Haneen and Iqbal were excited to hear the news of all the orders as the new year thus far had been so slow. I have had to give them days off and/or keep them busy doing busy work so that I could get them some hours. Desi rearranged her schedule so she could come in Friday morning to help me with packaging. We also had a Valentine’s pop-up at Nordstrom that Saturday, so it was truly all hands on deck.

The bakery was alive — singing, dancing, laughing, working. It felt like Christmas all over again — the same joyful rush and flurry of activity — but with one meaningful difference. Instead of splitting our time between sampling and production, we were able to devote ourselves entirely to fulfilling orders for customers who had already chosen to support us. Every ounce of our attention went into preparing your baklava with care.

Desi and I worked until 3:00am Saturday morning and Iqbal and Haneen came in early on Saturday morning with me and again Sunday morning. Both days are normally their days off but they showed up joyfully.

Iqbal even brought me a homemade breakfast Saturday morning because she knew I probably hadn’t eaten given that we worked into the early morning and I had to get a few hours of sleep in between.

They were kind.

They were selfless.

They were tireless.

All the days after the interview, after each task they would look at me and say, “What now? Give me another job!”

They are the heroines of this story.

But so are YOU!

You heard our story. You searched for us online or called me. You ordered. You shared. You cared. You showed compassion and empathy in a way that I desperately needed to see.

After two long months of watching most people take sample after sample (without any thought of making a purchase) — sometimes treating my team dismissively, sometimes unkindly — I was weary. I had been working hard to keep my heart focused on the good in people.

My faith bank account was running low.

And then you stepped in.

You reminded me of who we really are as human beings. You restored my faith with your kindness. You restored my belief that there are a lot of people who do care about small businesses. You showed my team that their work matters.

Even though we were inundated with orders, we handled every single box of baklava with care, love, and pride. I love what I do. And when I have the opportunity to serve you — even in the middle of a rush — I take it on with excitement and gratitude.

You turned what felt like a setback into a season of renewal.

From the deepest part of my heart — thank you!

With humility, love, and endless gratitude,

Rita

SMALL TEAM. BIG HEART.

Meet the Heartbeat of Sheer Ambrosia

BUILT BY WOMEN WHO SHOW UP

I would love to take a moment to introduce you to the women who make Sheer Ambrosia what it is.

For many years, it was just me. From 2008 until 2020, I handled every single aspect of this business myself — baking, packaging, marketing, bookkeeping, deliveries — all of it. I was running Sheer Ambrosia out of my home under the Department of Agriculture and Food’s Cottage Food Program — fully licensed, fully committed, and fully exhausted.

Then came 2020.

After my first appearance on Marketplace, the business grew beyond what I could manage alone. That Christmas season, Desi walked into my life — and into Sheer Ambrosia. She and her mom, Helene, became my very first employee/helpers.

Desi is not a baker — she is the best packager I have ever seen. And I say that with pride because I taught her the packaging process myself. I am a perfectionist about presentation. Every fold, every ribbon, every placement matters. Packaging is part of the experience. It reflects our standard.

Desi learned — and she learned well.

She is humble. She is teachable. She listens. She pays attention. She gets it.

What began as me showing her how I wanted things done has transformed into her mastering it with excellence. No one wraps, boxes, and prepares orders with more care and consistency. She protects the standard fiercely because she understands it deeply.

She is the mother of one very lucky little boy — the most committed mother. Fully dedicated. All in. She is also the wife of one of my biggest supporters. But truthfully? He wouldn’t be such a supporter if he hadn’t learned that loyalty from his wife.

Over the years, Desi has become my ride or die. My best friend. My confidant. She will work until 2:00 or 3:00 in the morning if that’s what it takes to get the job done. She is a beast — just like me. We are one and the same in our work ethic. She is fiercely protective of Sheer Ambrosia and of me in a no-nonsense kind of way. Her commitment is unwavering.

There is something sacred about someone who believes in you when you are still building.

Then there is Haneen.

I hired Haneen in October after my previous helper left in September. She is the mother of three beautiful daughters — one in middle school, one in elementary school, and one busy toddler at home. She and her husband came here from Iraq in search of a better life for their family.

Haneen and I spend our days laughing and teaching each other our languages. She is always worried she hasn’t said something quite right in English. I gently correct her because she wants to learn — but I constantly remind her that she speaks far better English than I do Arabic. (I don’t speak any Arabic at all, so she is clearly winning.)

She brings warmth, humility, and quiet strength into our kitchen every single day.

Iqbal joined Sheer Ambrosia thanks to Haneen. She is also a mother of three — two sons and a daughter — and is also from Iraq. Her oldest son was married over Christmas, and she somehow managed to host a beautiful wedding while continuing to show up and give her all at Sheer Ambrosia.

Iqbal is joy personified. She greets me with hugs. She brings me food. She smiles constantly. Her kindness fills the bakery.

And then there is Patricee.

Patricee is the proud mother of three grown sons — all in their 30s — and is now enjoying her empty-nester season. She is always smiling, speaks like a seasoned news reporter, and absolutely loves Sheer Ambrosia baklava. Truly loves it.

She never goes anywhere without slipping someone my business card.

She has season tickets to University of Utah football and the Utah Jazz. She is a social butterfly and, without question, the baklava ambassador of all ambassadors.

When Nordstrom invited me to do my very first in-store pop-up in June of 2025, I immediately called Patricee to help. Since then, she has become my go-to support for pop-ups and was one of my main team members at the holiday kiosk.

During the hectic holiday season, when some customers were pushy or entitled, Patricee handled every interaction with grace and patience. Thank goodness for her. She can sell baklava to anyone — even people who have never heard of it (and it turns out, there are quite a few of those here in Utah).

Her enthusiasm for Sheer Ambrosia matches my own. Wherever we go, she’s there — business cards in hand, smiling proudly.

And then there’s me.

A single mother. A dreamer. A passionate baker/foodie.

My children mean everything to me. I started Sheer Ambrosia after my divorce when I needed to find joy again — not just for myself, but so I could show my children what resilience looks like. I needed to pick myself up. I needed to move forward. I needed to reinvent myself — for them and for me.

I’m a Southern girl from North Carolina who learned to make baklava from a Greek family I worked for in high school and college. I fall in love with a culture through its food first, then music, then dance...in that order. I believe food should be beautiful. I love hosting dinner parties and loving on my guests with the food I make. I love wrapping pretty packages. I show love through what comes out of my kitchen.

I started this bakery from my home in 2008. Sometimes it was my main job. Sometimes it was a side hustle while I worked other jobs to provide. And in 2023, after years of refining 15 treasured recipes and raising my two children, I built a commercial kitchen and bakery so we could take Sheer Ambrosia national.

This is a female-led enterprise.

It is powered by mothers. Immigrants. Empty-nesters. Dreamers. Fighters. Women who show up. Women who work hard. Women who care deeply.

When you place an order, you are supporting all of us.

Thank you for believing in this dream. Thank you for supporting this female enterprise as we take our creations across the country.

DON’T MAKE US A ONE-HIT WONDER 😉

We’re Not Just For The Holidays — We’re Your Year-Round Secret Weapon

Once again, I am so incredibly grateful for the outpouring of orders after my recent (and very vulnerable) holiday check-in on Marketplace. Words truly cannot express what it meant that you took the time to find us — and then put your money where your heart was.

That kind of support is not small. It is powerful.

But may I ask you something?

Please don’t let this be a one and done.

By now, everyone who ordered after the show should have received their baklava. If you loved it… if the friends, family members, or clients you gifted it to loved it… please don’t forget about us.

Baklava is not just for the holidays.

It is perfect for:

  • Birthdays
  • Easter
  • Mother’s Day
  • Father’s Day
  • “Just Because” surprises
  • Bereavement gifts (a beautiful alternative to flowers)
  • Get Well wishes
  • Weddings
  • Funerals
  • Baby showers
  • Office parties
  • Client thank-yous
  • Celebrations of Life
  • Corporate gifting

In fact, corporate gifting is one of our fastest-growing areas. We work with real estate agents, sales professionals, and business owners who want to make a lasting impression. Baklava is sophisticated. It’s memorable. It’s unique. And it has a long shelf life.

We make every order fresh so you can enjoy that full shelf life. It freezes beautifully. It travels well. And it stands out in a world of predictable gift baskets.

We even design our own gift tags — so if you have a specific occasion, sentiment, or branding need, we can likely create something just for you.

Everyone has a team.

Your realtor.

Your insurance agent.

Your marketing person.

Your closing attorney.

Why not make Sheer Ambrosia part of your team?

When you send our baklava, we will not fail you.

We will only make you look good.

Thank you again for giving us a chance. We would be honored to continue serving you — not just in moments of hardship, but in every celebration and milestone ahead.

With gratitude (and a little wink 😉),

Our Saint Patrick's Day Promotion

ST. PATRICK’S DAY IS ALL ABOUT LUCK...

But at Sheer Ambrosia Bakery, we believe luck isn’t found — it’s layered.

This St. Patrick’s Day, we’re celebrating with something truly special: our

12-Piece Box of Pistachio Orange Cardamom Baklava. Forty-five whisper-thin sheets of phyllo are carefully brushed with real butter, layered with vibrant green pistachios and warm cardamom, then baked until delicately crisp and perfectly bronzed.

The magic happens next.

While still warm, each pan is finished with a generous pour of freshly made orange-infused honey syrup, slowly soaking into every layer. The result is tender, fragrant, lightly citrus-kissed baklava that glistens and melts with every bite — rich with tradition and crafted for sharing.

It’s a flavor story of heritage, connection, and the simple joy of offering something extraordinary at your table. And did I mention that this flavor is my favorite?!

To make your celebration even sweeter, enjoy 15% off with code LuckyLayers2026 at checkout.

This special offer is available now through March 17th.

Because sometimes, the best kind of luck is the kind you bake.

Opening day at the kiosk — a moment of optimism before the season unfolded.

Behind the Baklava: A Season of Hard Lessons

Not Every Bet Pays Off — But Every Bet Teaches You

January is usually the month where I reflect, reset, and look ahead with optimism. This year, that reflection required a little more honesty than usual.

From the outside, Sheer Ambrosia Bakery often looks like a dream — a beautiful bakery, elegant packaging, handcrafted baklava, and national press. What most people don’t see are the long nights, the relentless decision-making, and the risks that come with choosing growth over comfort.

This past Christmas season was, without question, the most difficult one I’ve experienced since starting this business.

Last year, I made a very intentional decision to strengthen Sheer Ambrosia’s presence here at home in Salt Lake City. Shipping costs continue to rise, and while I am deeply grateful for many of you who are out-of-state customers, I worry about how much more I could reasonably ask you to absorb. I wanted to build more local support — something sustainable — so the business wouldn’t rely so heavily on online sales alone.

After a successful summer selling in Nordstrom, I felt hopeful. If baklava could thrive during the summer months, surely the holiday season would be an even bigger success. I committed to a two-month kiosk at the mall, knowing it would essentially function as a second location during the busiest time of the year.

What followed was months of planning, execution — and expense. City licenses, state approvals, Department of Agriculture and Food requirements, tax compliance, staffing, signage, design, logistics, inspections — and yes, a small fortune in fees just to get permission to open the doors. Making the kiosk beautiful cost money too, but I believe presentation matters, especially for a handcrafted product like ours.

I was incredibly fortunate to have Monte McDonald (husband to a long time customer), who helped me build the structural elements that gave the kiosk its character and swagger — and he didn’t charge me a penny. Thanks to his generosity and craftsmanship, there wasn’t a single day that went by when someone didn’t tell us we had the loveliest kiosk in the mall.

All of this was happening while I prepared for our usual holiday production rush — and when my only kitchen helper quit on Labor Day, I pivoted and kept going. Seven days a week, I planned, adjusted, and executed every moving piece.

By October, behind the scenes, Haneen and Iqbal (my new helpers) worked tirelessly in the kitchen alongside me — learning my processes, assembling 45 layers of phyllo by hand, eventually cutting endless samples, and ensuring quality never slipped. Desi helped me power through packaging at the main location, making sure orders went out beautifully and on time. Their dedication kept the bakery running during an extraordinarily demanding season, and I am deeply grateful for them.

At the kiosk, I want to thank Patricee, Mara, Steve, and Camila for hanging in there with me. Your hard work, patience, and commitment to spreading the word about Sheer Ambrosia did not go unnoticed — even when the days were long and the crowds were challenging.

We opened the kiosk on November 1st, hopeful and prepared.

What I did not fully anticipate was how difficult it would be to turn curiosity into meaningful support. Sampling — which should be a bridge to connection (and was at Nordstrom) — became overwhelming. Large retailers like Costco have created a culture where people expect unlimited samples without any obligation to buy. That model works for billion-dollar companies. It does not work for a one-woman-owned small business.

Many visitors wanted to taste but had no intention of purchasing. Samples were taken without asking. Children were pushed forward for free treats. My staff was rushed, discouraged, and many times disrespected. We gave out thousands of samples — often at the expense of production — simply trying to keep up.

Instead of selling, my team was constantly cutting samples. Instead of connecting, we were crowd-managing. The emotional and financial toll was heavy. I lost employees at the kiosk — some quit, some weren’t the right fit — and I found myself filling in wherever the business needed me most.

For much of November and December, I barely went home. I slept at the bakery, working around the clock to hold everything together. I was present at the kiosk daily (sometimes to work and other times to check in) and in the kitchen nightly, determined not to let standards slip.

And after all of it — the planning, the staffing, the sacrifice — the kiosk did not generate profit. After Christmas, daily sales didn’t even cover payroll. On December 30th, with the mall’s permission, I closed one day early, moved out, went home, laid on my bed, and slept.

This experience was painful — but it was also clarifying. Entrepreneurship isn’t about pretending every decision works. It’s about taking full responsibility when something doesn’t, learning quickly, and adjusting with intention. I was reminded that not every environment holds the right audience — and that visibility alone does not equal alignment.

Since the new year began, I’ve slowed down just enough to care for myself again. I’ve been to the doctor. I’m sleeping in my own bed. I’ve cooked real meals. I’ve reconnected with my home — and with the truth that sustainability matters as much as ambition.

And here’s what I know for sure:

Sheer Ambrosia is still standing. Still handcrafted. Still worth building.

2026 will be different — not because I’m working less hard, but because I’m working smarter and more aligned. I’m exploring growth paths that respect the craft, the people behind it, and the customers who understand that supporting small business is an intentional choice.

If you believe in what we do — in food made by hand, businesses built with integrity, and entrepreneurs willing to tell the truth — your support matters. Every purchase, every recommendation, every moment you choose Sheer Ambrosia helps carry this work forward.

Thank you for standing with me. The next chapter is already being written — and I’m committed to making it stronger, wiser, and more sustainable than ever.

With gratitude,

Rita

Owning a bakery isn’t always glamorous. When the work demanded more than I had left, I rested right where I stood — and kept going.
ORDER BEST BAKLAVA EVER HERE!
Why Intentional Choices Matter

Every detail is intentional — beauty is part of the craft, just as much as flavor.

Small businesses are sustained by everyday choices — where people shop, what they share, and how they choose to give.

If you care about handcrafted food, cultural tradition, and businesses built with integrity, your choices truly matter.

Here are a few ways those choices make a difference for Sheer Ambrosia:

Buy Small When You Can

Choosing to shop small makes a real difference for small businesses like mine. When you purchase directly from the bakery, you’re supporting handcrafted work, local jobs, and a business rooted right here in our community.

Share the Word

Referrals matter more than you may realize. Tell a friend, bring someone new into the bakery, or recommend Sheer Ambrosia when someone asks for a thoughtful gift. Your voice helps us reach the right people — the ones who truly value what we do.

Rethink Gifting — Choose Something Intentional

Just this last Saturday night, I was celebrating a dear friend’s 50th birthday. By the end of the evening, she was trying to give away armfuls of gorgeous flower bouquets — not because she wasn't thankful or they weren’t beautiful, but because she’s allergic and simply couldn’t keep them. As I watched her reluctantly part with gifts meant to honor her, it struck me: this is exactly why baklava can be just as meaningful as flowers.

We give flowers to say thank you, I love you, I’m thinking of you, congratulations, I’m sorry, or you matter to me. Baklava carries those same sentiments — but it’s meant to be shared, enjoyed, remembered. It doesn’t wilt. It doesn’t sit untouched. It brings people together around a table.

Whether it’s a birthday, a milestone, a condolence, or a simple “just because,” choosing baklava is choosing a gift that’s thoughtful, lasting, and deeply human.

Every intentional choice — to buy, to share, to gift with purpose — helps carry this business forward. And for that, I am truly grateful.

🌸 The Language of Food

Sheer Ambrosia's Origin Story Brought To Life

We filmed in three different locations with a team of at least 13. Every single person on that crew made me feel seen, valued, and loved. I learned everyone’s name—Celina, Gabby, Maddy, Sarah, Emilia, Hally, Kelty, Max, Brian, Mary Alice, Bailey and of course Maya and Don—because they earned that level of care and attention.

After a season that tested me in every way, I want to share something that reminds me why I started — and why I continue.

August 2024, just one day before the deadline, a dear friend reached out to tell me about a grant opportunity through Spy Hop Productions (Phase 2 Media), funded by the NBA Foundation. The grant offered something extraordinary: a fully produced commercial — written, filmed, and edited by professionals — created to amplify minority-owned businesses.

I stayed up late that night, poured my heart into the application, and submitted it just in time.

I won!!

Thanks to the generosity of the NBA Foundation and the incredible creative leadership of Maya Hardie and Don Barfuss, Sheer Ambrosia’s Origin Story was brought to life with care, respect, and artistry.

Over one unforgettable weekend in July 2025, a talented crew and cast captured a story that is deeply personal to me — not just as a business owner, but as a woman shaped by culture, family, and craft.

This film honors two powerful influences that made Sheer Ambrosia possible:

the Greek family I worked for in high school and college, who taught me the art and tradition of baklava, and my mother, my first inspiration in the kitchen.

It is because of both, that Sheer Ambrosia exists — a Greek/Southern baklava fusion, rooted in love, resilience, and lived experience.

Watching this mini film for the first time reminded me that even in the hardest seasons, this story is worth telling.

I’m so proud to finally share it with you.

Press play to watch the story that lives behind every layer of Sheer Ambrosia.

Gratitude to the

Three Female Leads

A heartfelt thank you to the incredible actresses who portrayed pieces of my life:

  • Patricee, who played my beautiful mother and reminds me where the seed of this dream was first planted.
  • Phyllis, a radiant 93-year-old Greek goddess who embodied the Yiayia that set me on my baklava path.
  • Kalu, who portrayed young Rita with such authenticity and heart that I teared up watching her bring my story to life. Kalu, you got it so right—you’ll always have a special place in my heart.

---

A heartfelt thank you to Munashe Tanjani, the editor who shaped this film with such care and intention. Your ability to weave emotion, pacing, and story into something so cohesive and powerful brought the heart of Sheer Ambrosia fully to life. I’m deeply grateful for your artistry and vision.

---

And to every single person on that set all whom I’ve already named—thank you. Thank you not just for your time and talent, but for understanding how deeply intertwined Sheer Ambrosia is with my life story. You didn’t take that lightly. You treated my bakery and my journey with care, with reverence, with heart. You were kind. You were sensitive. You were present. You made me feel respected, uplifted, and honored—and that is something I will carry with me forever.

A Valentine’s Day Worth Savoring

Valentine’s Day is all about intention — choosing something thoughtful, beautiful, and meant to be shared. This year, we’re honored to celebrate the season of love with you in a very special way.

Sheer Ambrosia will once again be hosted by Nordstrom, this time for Valentine’s Day, and this year the holiday falls on a Saturday, making it the perfect moment to slow down and savor something sweet.

Back by popular demand is our Special Edition 12-Piece Pink Box, filled with handcrafted baklava made with 45 layers of hand-laid phyllo, perfectly spiced nuts, and our signature honey syrup. For Valentine’s Day, choose between:

  • Traditional Honey Walnut Baklava
  • Chocolate Almond Baklava

Both flavors will be 15% off for the holiday — a small thank-you for celebrating love with us.

And because love comes in all sizes, we’ll also have a selection of smaller, thoughtfully priced options* starting at $10 — perfect for a sweet gesture, a little indulgence, or a simple “thinking of you.”

For those who love to share generously, we’re also offering bundles of ten 4-piece boxes, ideal for clients, teams, friends, or classrooms. Each bundle is also 15% off, and I’ll happily include a Valentine’s tag on every box, so each gift feels personal, intentional, and ready to give.

Use code: Valentines2026 for the discounts. Starts now and ends on Valentines Day.**

This year, we’re also introducing something new — and I couldn’t be more excited to share it:

To complement our Chocolate Almond baklava, we’ve partnered with Red Rock Candle Co., a small/local, woman-owned business, to create a Chocolate Almond candle that smells as divine as it sounds. These candles are thoughtfully handcrafted with wooden wicks, which create a soft crackling sound when lit — cozy, calming, and reminiscent of a warm fireplace.

Wooden wicks also burn cleanly and evenly, making the experience longer-lasting and more intentional — just like everything we do at Sheer Ambrosia. Supporting this candle means supporting another woman-owned business that values quality, craft, and heart as much as we do.

✨ Chocolate Almond Candle — $20

Whether you’re celebrating a partner, a friend, your family, or yourself, this Valentine’s offering is about more than a gift — it’s about creating a moment and supporting small businesses built with care.

We can’t wait to celebrate love with you!

*These items will only be available locally, not online.

**These discounts are for online only.

From Left to Right: Thee Nikki Walker, Me, and our friend Carin Crowe, the CEO of Habitat for Humanity

In Memory of Nikki:

A Personal Reflection from the Heart of Sheer Ambrosia

This isn’t a typical Sheer Ambrosia newsletter article. But as the founder and face of this business, I feel compelled to share something that’s been weighing heavily on me—and, in turn, has affected my ability to show up fully for my work.

On the morning of Tuesday, June 24th, I woke up to what felt like a nightmare. Around 7:30 a.m., I received a call from Dr. Sidni Shorter, President of the Utah Black Chamber. The moment I heard her voice, I knew something was wrong.

“What’s wrong? What happened?” I asked.

Her voice was low and trembling—barely a whisper. She hesitated, and then the words came:

“Rita, Nikki died.”

My brain couldn’t process it. Nikki? Surely not our Nikki. Not Utah’s Nikki. Maybe she meant someone else—an older community member I didn’t know well? But no… it was Nikki Walker.

Just weeks earlier, I had seen her at the Habitat for Humanity fundraiser. She was radiant as always—commanding the room as emcee, full of confidence and poise. How could this be?

I learned that Nikki suffered from asthma, and Utah’s air quality—especially during our recent windstorms—had made conditions difficult for anyone with respiratory issues. I never imagined asthma could be deadly, but tragically, it was.

Nikki and I weren’t best friends, nor would I say we were close. But she was a constant presence in my world—a bright, undeniable force at nearly every event I attended. She showed up for me in moments that mattered. She came to my grand opening. She was there to comfort me last November when the building that houses my bakery was vandalized, and I had to throw out $2,000 worth of baklava. I cried on her shoulder that day. She didn’t have to be there, but she was. That was Nikki. A rock for so many of us.

The news of her passing spread quickly—rightfully covered by major news outlets. I attended three tributes before her funeral, each one overflowing with people whose lives she had touched. It’s hard to believe someone who lived in Utah for just over seven years could leave such a profound legacy.

Nikki was fearless. A fierce advocate for Diversity, Equity, and Inclusion—and a proud Republican. She didn’t fit neatly into anyone’s expectations. She didn’t code switch. She was unapologetically herself: Jersey-born, bold, brilliant, and relentless in her pursuit of justice and excellence.

She mentored so many. Sat on boards. Ran a PR company. She even ran for state office. She was everywhere—at every party, every panel, every moment that mattered. And yet, somehow, I never made the time to truly get to know her. Not in the way I now wish I had.

I turned down invitations—to her birthday party, to the Black Panther screening she hosted—because I was always working. Always too busy. Too buried in the grind of running this business. And now, I can’t get those opportunities back.

Losing Nikki has forced me to reflect on some hard truths:

  1. I need to slow down and nurture the relationships I value—and the ones I haven’t yet taken the time to grow.
  2. I need to prioritize my health. Sleep better. Eat better. Take care of myself, not just my business.
  3. I need to speak up. To tell people I love and admire how I feel while they’re still here to hear it.
  4. I need to live more like Nikki. Bold. Fearless. Unapologetically authentic.

For days after her death, I was in a fog. Grieving not just for myself, but for her beloved mother Sharon, her son Jacob, and the family members I don't know. The sense of loss wasn’t only personal—it was communal. We didn’t have to be best friends for me to feel this deeply. Her passing has left a crater in this community.

Nikki Walker was only 48 years old. She was a national treasure. A once-in-a-generation kind of woman.

And while I didn’t get to know her as well as I now wish I had, I miss her already.

My Baklava Wedding Cake...a sweet - think outside the box - idea!

In my ongoing mission to grow Sheer Ambrosia and share my baklava with new audiences, a wonderful opportunity came my way recently—and I knew I had to say yes.

A representative from Utah Bride & Groom Magazine reached out to invite me to showcase Sheer Ambrosia at their annual White Party—a highly anticipated event in the wedding industry. He found me online and thought my baklava might be a perfect fit. I listened, did my research, and said a lot of prayers. The booth fee was steep—more than I’ve ever paid for any event—but weddings have always felt like the holy grail for my business. And I mean, baklava at a wedding? What could be more elegant?

Sheer Ambrosia’s baklava is sophisticated, stunning, rich with flavor, and built to last. Unlike a frosted cake that wilts in summer heat, our pastries hold up beautifully—making them an ideal summer wedding treat or favor. After some deep consideration, I decided:

Go big or go home.

If I was going to step into the world of weddings, I was going to bring my A-game.

At the White Party, I handed out 100 one-piece wedding favor boxes and sampled three of our top flavors—including our fan-favorite Traditional Honey Walnut and our newest hit, Pistachio Orange Cardamom. The theme this year?

Mediterranean Oranges.

How perfect is that? I couldn't have picked a better moment to showcase that beautiful citrus-infused flavor. The fragrance, the color, the vibe—it all aligned.

The event was buzzing with Utah’s top wedding planners, photographers, caterers, and stylists. I made so many incredible connections and had so many meaningful conversations. And the best part? A full-page ad for Sheer Ambrosia will be featured in the next edition of Utah Bride & Groom Magazine! Fingers crossed the right people see it—and taste what we do best.

Owning and growing a business isn’t easy. It’s exciting. It’s exhausting. But it’s also the most rewarding, exhilarating work I’ve ever done. I’m pouring everything I have into making Sheer Ambrosia thrive—and moments like this give me hope that it’s all worth it.

To celebrate this beautiful step into the wedding world, I’m offering a special treat for you:

💫 Enjoy 15% off our Traditional Honey Walnut and Pistachio Orange Cardamom flavors—the very same ones we featured at the White Party!

Use code: WHITEPARTY15 at checkout through July 31st.

Take a peek at some of the photos from the event below—they’re as gorgeous as the day was sweet.

And if you or someone you know is planning a wedding, baby shower, or special event, remember:

Baklava makes everything more beautiful.

With gratitude,

Rita

Me with my ride-or-die Desi - She is always such a huge help at events like this. When the party was over, Desi took the lead and got everything packed up and ready to go while I was still talking and meeting the right people. Thank you Des, I love you!

Me with my dear friend Chris—one of Utah’s premier wedding planners. If you know someone looking for a visionary, out-of-the-box planner who creates truly breathtaking events, I’d be happy to connect you. I attended one of his weddings last year, and it was hands-down the most stunning celebration I’ve ever experienced!

🌸 A Heartfelt Thank You to Nordstrom

And Why This Partnership

Means Everything to Me

Just outside the Fashion Place Mall entrance to Nordstrom.

At the end of May, I received an unexpected email that nearly knocked me off my feet—in the best way possible.

It was from Nordstrom.

They were reaching out to ask if I’d like to sell my baklava in their store as part of their Juneteenth celebration. Would I?! That was a no-brainer. I practically broke the sound barrier replying to that email—Speedy Gonzalez had nothing on me that day! Summer is typically a lean time for Sheer Ambrosia, so this opportunity couldn’t have come at a better moment.

They offered me two dates: the Saturday before Father’s Day or the following Saturday. Naturally, I chose Father’s Day weekend, hoping for that sweet gift-giving momentum. I arrived early, set up my display, and by the end of the day...

I had completely sold out.

It was glorious. For the first time in a long time, I felt I was exactly where I was meant to be. Surrounded by people who not only understood what baklava was but valued it—who appreciated the love, craft, and heritage that goes into every piece I make. That day gave me more than just a cash infusion (which my small business absolutely needed). It gave me hope.

After that incredible experience, I asked who was scheduled for the following weekend. They told me I could come back if I wanted. You better believe I jumped on that chance! And while the second Saturday didn’t sell out quite like the first, it was still an amazing day.

Let me tell you: compared to the hustle of the farmers market—the 2:30 a.m. alarms, the heavy tents, the 100-degree heat—this was a dream. No explaining what baklava is to every passerby. No sweat-drenched days. I was indoors, surrounded by air conditioning and good vibes, and every person I met felt like someone I had baked for my whole life.

Now, I’ve been invited back for a third time this Saturday—and I could not be more grateful.

Stephanie, Chloe, and the entire Nordstrom team: thank you. From the bottom of my heart. You saw me. You saw my work. And you gave me the platform I’ve been fighting for.

All small businesses like mine really need is a chance. A place to stand and present what we do with excellence, in front of the right audience. Since opening my commercial kitchen, reaching those people has been one of my biggest challenges. I’ve hired marketing firms, paid for Google, Facebook, and Instagram ads—but nothing compares to getting in front of real people who get it.

Nordstrom shoppers are my people.

And Nordstrom, you’ve given me that stage. Thank you for supporting my dream—and helping me keep it alive.

If you’re near Nordstrom this Saturday, come by and say hello.

Taste what all the buzz is about, grab a box for yourself or as a gift, and help me keep this sweet momentum going.

TOUCHED BY HER SILENT STRENGTH

Meena's Gift From Me In Honor of Her Accomplishment

This last Thursday morning, Meena, my employee from Afghanistan, had her husband text me to say she might be late for work. The reason? She was attending her swearing-in ceremony at the Utah State Capitol to become a U.S. citizen.

I was floored. Not because she might be late—but because she was still planning to come in at all! That moment, that ceremony, is no small thing. It’s monumental. It marks the culmination of an unimaginable journey. I told her husband that she was more than welcome to take the day off to celebrate and reflect…that I had the bakery covered. He was grateful, and I was honored to give her that space.

Again that was Thursday—and since then, Meena has stayed on my heart. I’ve been reflecting on how lucky I am to know her, and how grateful I am that she is here, safe, and part of our little team and community.

It’s not easy to uproot your life and start over in a foreign land. It takes courage most of us will never understand.

A few weeks ago, I brought some drinks to work to share with her. Meena politely declined, so I asked what she does like to drink besides water. She smiled and said, “Water. Tea. Sometimes a Coca-Cola.” We drink a lot of water around here, but I wanted to do something nice—so I pulled out all the new tins of tea we carry at the bakery and let her choose one. She picked a flavor, and I brewed her a warm cup right then and there.

Fast forward to the moment I found out about her big milestone—I knew exactly what to do. I jumped online and found the sweetest little tea set on Amazon. (Thank you, Prime shipping!) I picked up wrapping paper with red, white, and blue tones, made a card by hand, and gave it to her as a surprise on Friday afternoon.

She thanked me for the gift, smiled quietly, pulled out her phone, and said, “I want to show you something.” It was a video of her ceremony.

I cried.

Watching dozens of people take their citizenship oaths—people from over 40 different countries—flooded me with emotion. I focused on Meena in the crowd. Seeing my friend, this strong, graceful woman, officially claim her place in this country... it broke me open in the best way.

I think, sometimes, we who are born here forget what a gift it is. We take for granted the safety, the clean water, the freedom to go to school, to work, to start businesses, even if you’re a single woman…to speak freely, and to live without fear. I’ve traveled enough to know: We are blessed in ways many people around the world can only dream of.

I’ve seen extreme poverty close up. I’ve lived abroad, and I’ve experienced situations where very small children were up in the middle of the night, in the streets asking to shine my shoes for coins. And I have walked in stores in foreign countries where I wasn’t treated nicely until the moment the store owners realized I was a U.S. citizen.

So no, I’ve never seen a swearing-in ceremony before. I never had to. My citizenship was granted by birth. But watching Meena’s video touched me in a place I didn’t know needed to be touched. It made me more aware, more grateful, and more committed to honoring the people who choose this country with hope in their hearts.

I am so proud of Meena. I’m proud to employ her, to give her her first job in the United States, to bear witness to that and to watch her grow. She doesn’t speak much—she’s still learning English—but her presence is powerful. She shows up, she works hard, she listens, and she does her part (to help me run the business) with quiet grace and resilience. I am touched by her silent strength.

May the Lord continue to bless her and her family as they plant new roots in this country, building safety and opportunity for generations to come. And may we never forget what a privilege it is to live in a place where dreams—like Meena’s—can take root and thrive.

Supporting Small, Crafting Legacy:

— A Juneteenth Message

When I first met many of you — customers, supporters, and friends — it was June of 2020. I had just been featured on NPR’s Marketplace with Kai Ryssdal during a moment when many people across the country were intentionally seeking out and supporting small, independent businesses like mine.

That summer felt like a turning point. People were energized to support their neighbors, shop small, and back local makers who put their hearts into what they do.

Five years later, some of that energy has shifted. We’re all navigating higher costs and tighter margins, the challenge of getting attention in a noisy online world, and the reality that running a small business — especially one built from scratch — takes more than passion. It takes grit, community, and unwavering belief.

And right now, community support matters more than ever.

Juneteenth Is a Reminder of Resilience

Juneteenth commemorates the day in 1865 when the last enslaved people in Galveston, Texas, finally learned they were free — more than two years after the Emancipation Proclamation was signed. It marks the delayed but undeniable arrival of freedom.

To me, Juneteenth is a celebration of resilience — of what’s possible when people push through challenge after challenge and still rise with hope and determination.

That’s the spirit I try to bring to Sheer Ambrosia every single day.

Behind the Layers

In late 2023, I secured a $70,000 SBA loan — just enough to complete the build-out of my new shop. It was exactly what I needed to bring the space to life, but there wasn’t anything left over for marketing, hiring, or scaling the business.

Since then, I’ve been the one behind the social media, the newsletter, new business development, new product development — everything. Not because I want to wear every hat, but because that’s what it takes when you're trying to build something meaningful without a big budget or a big team.

Right now, I’m working hard to expand into the wedding and corporate gifting markets. I believe our baklava — with its 45 hand-brushed layers of phyllo and rich, gourmet flavors — deserves to be a go-to gift for companies and celebrations alike. But as many of you know, breaking into new markets takes time, consistency, and a lot of heart.

A Call to Support Local Makers

This Juneteenth, I’m not here to make a political statement. I’m here to make a personal one:

Small businesses — especially ones built on craftsmanship and care — need your support to survive and thrive.

Choose businesses that show up with quality and passion. The ones creating something with their own hands. The ones who make your community unique.

When you support a small business like mine, you’re not just buying a product — you’re investing in a dream, a family, and a future.

Sweet Legacy, One Box at a Time

At Sheer Ambrosia, every box of baklava is a labor of love. It’s a reflection of my Southern roots, my affinity for Greek culture, my love of tradition, and my belief that food should connect people.

So if you’ve supported us in the past — THANK YOU! Truly. And if you believe in the power of small, handcrafted, homegrown businesses, I hope you’ll continue to shop with us and share our story.

Let’s celebrate freedom, resilience, and the beauty of building something real — together.

With gratitude and hope,

Rita

This is my mom! We were on a work trip to the Bahamas — mom came with us to care for our baby boy while we took care of business. So thankful for her!

A Foundation of Love

Honoring My Mom This Mother’s Day

When I first started Sheer Ambrosia Bakery, people would often ask, "How did a Black woman end up making baklava?"

I would usually tell them the story about working for a Greek family and how they introduced me to their culture — and to that incredible pastry called baklava among other tasty treats. And that story is true. But there’s another, equally important influence on my love of baking and all the different flavors of baklava I now carry: my mom.

Growing up, I was one of five daughters. My mom and dad were regular, hard-working, blue-collar folks. We didn’t have a lot of money, but we always ate well — thanks to my mom’s magic in the kitchen.

Every Friday night after work, she’d take us grocery shopping. And every Saturday night or Sunday afternoon, she’d bake something wonderful for us to enjoy after church.

I remember sitting on a stool, perched right above the counter, just watching her. When I was really little — before she started working outside the home — she was always in the kitchen, creating something delicious.

I remember one time she made yeast donuts from scratch and blackberry pies with berries we picked ourselves was a constant every summer. On our way to my grandmother's house, we always would stop along the road and buy summer peaches at farm stands and with them, she made the juiciest peach cobblers. In the fall, we would go apple picking and homemade apple pies were on the menu. And in the late fall and winter, pecan pies were always part of the Sunday treats. She made delicious cakes too. Lemon and coconut and one of my favorites was a 5 layer Japanese fruitcake. She was something else my mom!

Whatever the season, my mom made it taste like heaven. My sisters, my dad, and I devoured everything she made — and we loved her all the more for it.

In our home, my mom was our Martha Stewart long before I even knew who Martha Stewart was. She was an amazing homemaker, and I idolized her for it.

It wasn’t until my teenage years that I also learned from the Greek family. But it was my mom who first gave me the foundation — not just for baking, but for feeding people with love.

This Mother’s Day, I want to publicly salute my mom —

Thank you, Mom, for giving me a wonderful foundation.

Thank you for showing me what it means to take pride in what you create.

Thank you for teaching me that food can be an expression of love — whether sweet or savory.

And thank you for passing on the work ethic that makes running Sheer Ambrosia feel like second nature.

Because of you, my bakery is not just a business. It’s a home. It’s a table. It’s a hug.

Happy Mother’s Day, Mom. I love you!

— Rita

NEW BAKLAVA FLAVOR!

Pistachio Orange Cardamom

A Journey Through Flavor, Culture, and Memory

An AI rendition of my new baklava flavor - I'll have professional photos taken soon.

This baklava flavor is more than a pastry—it's a passport. It all began a couple of weeks ago when an Iraqi woman, Ragda, who owns a local market called Sinbad's heard about my baklava from one of my other wholesale customers. They called me together because Ragda was curious to try my baklava for herself. When we met, she told me she loved the essence of what I made, but asked if I could create a version more authentic to her culture—without cinnamon or clove, which aren’t traditional in her country's baklava.

Flavor is the soul of my cooking, so I hesitated to make anything with my brand name on it without adding spices. But there was something about this woman—her warmth, her passion for food, her generous spirit—that made me want to say yes. She also wanted a version made with only pistachios, no walnuts, no pecans, just a pure pistachio baklava. Pistachios are super expensive but again, something about her made me want to do it. I wanted to please her. So I set out to make it work.

I began researching traditional Iraqi baklava and discovered that some recipes used orange blossom and some used cardamom—two ingredients I already adored. It brought back a memory of my Indian friend Usha, who once made me cardamom-peach crepes that were unforgettable. I texted my new friend from Sinbad's and asked, “Would orange and cardamom be okay?” She hesitated, but said yes. I assured her that if she didn't like it, I could make something else.

I found the perfect orange oil at one of my favorite specialty baking shops and the finest cardamom after going to three different stores—no expense spared—and then I got to work in my kitchen-lab. What came out of the oven looked and smelled like magic: flaky layers of phyllo wrapped around lush, buttery pistachios, kissed with bright citrus and warm spice. I wanted to try it in that moment but I had to be patient and wait for Ragda.

When I brought the finished baklava to her store the next day, we sat down together—she, one of her employees, her daughter, and her daughter’s friend—and we all took a taste. One bite, and I was transported—someplace I’ve never been but somehow remember. It was the strangest sensation. A taste so deep and nostalgic, it made me believe in past lives. We looked around at each other, eyes wide, stunned into silence by how delicious it was. The room filled with smiles, nods, and that knowing look food lovers share when something is just right.

She was intrigued. She told me she had to carry it in her store—with a few tweaks. That cardamom I had to ask her if I could include...well, she asked me to add a touch more. Also in her culture, they eat the baklava in squares, so I will do that as well for her.

Then, in the middle of our visit, she paused to help a customer and returned with a gift—a plate of her freshly made falafel and salad. She invited me to eat while we chatted. I devoured every bite. It was so flavorful, so familiar, and full of the same kind of love I infuse in everything I bake.

I left the very first pan of this new flavor with Ragda, heart full and soul nourished by the connection. This baklava may have been made for her—but now, I'll also make it for you...albeit in our Sheer Ambrosia signature triangular shape. Thank goodness the shape doesn't change the flavor.

Let Me Count the Ways...

All the Occasions to Sweeten Life with Baklava

I had so much fun designing all the gift tags above — with a little help from a design program, of course! If you don’t spot one that’s just right, no worries — I can whip up a custom tag just for you!
When it comes to gift giving, sometimes it's hard to know what to send. Flowers wilt, chocolates are predictable, and gift cards... well, they’re not exactly memorable. But you know what never fails to surprise and delight? A beautiful box of gourmet baklava!

At Sheer Ambrosia, we believe every moment — big or small — deserves to be celebrated with something sweet, thoughtful, and made with love. Here are just a few occasions when baklava makes the perfect gift:

🌟 Holidays: Whether it’s Christmas, Hanukkah, Eid, Diwali, Easter, Thanksgiving, or Valentine’s Day, baklava brings a festive, delicious touch to any celebration. (And it ships beautifully across the country!)

🎂 Birthdays: Wish someone a happy birthday with a gift that's as special as they are. Personalized gift tags make it even sweeter.

🕊️ Bereavement: During times of loss, sending a heartfelt gift of baklava offers comfort in a way words sometimes can’t.

🌿 Get Well Soon: Brighten someone’s day and let them know you’re thinking of them with a box of buttery, honey-kissed goodness.

🎉 Congratulations: New job, new baby, graduation, retirement, engagement — whatever the win, baklava says "I'm so proud of you!" in the most delicious way.

💖 Just Because: Sometimes the best gifts are the ones given for no reason at all. Send a little love “just because” and watch someone’s whole day light up.

🏡 Housewarmings: Welcome friends or family into their new home with a box of baklava — a traditional symbol of hospitality and sweetness.

🎓 Teacher Appreciation: Teachers give so much; why not thank them with something unforgettable?

👰 Wedding and Bridal Gifts: A unique treat for bridal showers, wedding favors, or a special thank-you to the parents of the bride and groom.

🕯️ Client Appreciation: Whether you’re thanking a client, a business partner, or an employee, gifting baklava leaves a lasting (and delicious) impression.

No matter the occasion, baklava is a thoughtful, elegant gift that feels both traditional and unexpected — the kind of present people remember.

I've put together a collage to show off all the fun, beautiful gift tags we use to match any occasion — don't see your occasion in the collage...no problem...I can make one especially for you.

So don't forget Sheer Ambrosia when you're trying to think of something special to give! When in doubt, sweeten the moment with baklava.

Me and My New Friend Hope, at the Bakery, On Her Birthday!

Sweet Encounters and Full Hearts at Sheer Ambrosia

Last Friday was one of those magical days at the bakery that left my heart overflowing.

It started with a call from my dear friend Carlos. He and his girlfriend, Elizabeth, were dealing with a death in the family and wanted to help provide something special for everyone to enjoy after the funeral. Carlos said he knew exactly who to call when they found out that the family loved baklava. I had four flavors available and quickly began packaging their order. When they arrived, I was still wrapping things up, so we laughed and chatted while I finished. Elizabeth’s son Anthony was with them too, and the energy they brought into the bakery was such a gift.

In the middle of all that, I forgot to lock the door—and wouldn’t you know it, in walked another group! A beautiful, bubbly family of six, full of smiles and curiosity. After I said goodbye to Carlos and his crew, I welcomed this next wave of baklava lovers with open arms. They were in town to celebrate one sister’s graduation from dental school and the gal who doing most of the talking said she had heard about Sheer Ambrosia on NPR’s Marketplace and was excited when she googled us and found out we now have a store front.

I still had enough baklava left, so I gave them samples to enjoy while I packaged their boxes. We had the best time chatting. They asked about how I landed in Utah, about my kids, and about the bakery. We laughed, swapped stories, and connected like old friends. Before they left, I asked the graduate’s name and wrote her a little note of congratulations, tied the note to a box of baklava (my personal gift to her), and added a Sheer Ambrosia mug so she could enjoy her favorite drink while she enjoyed her baklava. As they walked out the door, I realized—I never even asked the name of the sweet woman I’d been talking to the whole time or her family! But my heart was so full.

Not a couple of hours later, I got an email alert—someone had left a Google and Yelp review. My heart always races a little when I see those notifications, like that nervous excitement you felt as a kid on report card day. I opened it up—and there it was, a glowing review from Rose—the very same woman I'd just spent that unforgettable 20 minutes talking to. Somehow, in the midst of their family celebration, she made time to share kind words about her experience with me. It truly made my day. You are read it below:

5 STAR REVIEW

I’ve ordered from Rita at Sheer Ambrosia before (to DC) and already knew her baklava was hands-down the best I’ve ever had—but nothing could have prepared me for the joy of meeting her in person!

I was in Salt Lake City celebrating my little sister’s graduation from dental school and when I Googled, I saw that Sheer Ambrosia now had a retail space and I just had to to check it out! I didn’t realize it was order-by-pickup/appointment only, but the universe was clearly smiling on us because Rita was there, and she had just enough leftover baklava for my family and me to buy. It felt like fate.

Not only did she greet us with free samples (while we drooled and waited for our fresh baklava to be packaged), she shared her incredible story with us, asked about ours, and made us feel so seen and special. She gifted my sister a beautifully wrapped box of baklava, a ceramic campfire mug, and a handwritten note—a handwritten note! Who does that?! Rita does!

Sheer Ambrosia doesn’t just make world-class baklava (seriously—crispy, buttery, rich, and layered with love)—it’s a reflection of the beautiful human behind it. Rita, thank you for turning an already joyful day into something unforgettable. You gave us so much more than dessert—you gave us a sweet memory that we’ll treasure forever. 💛

If you haven’t tried or ordered from Sheer Ambrosia yet, do it. Your taste buds (and heart) will thank you!

--Rose Reyling

These moments are everything to me. Yes, I love creating delicious baklava—those flaky, golden, buttery layers filled with sweet, crunchy goodness—but what I love even more is sharing moments with you. Getting to know you. Hearing your stories. Celebrating your milestones.

Also this week, I had a customer friend, Monica call from Maine about an online order she had just placed that I needed to modify. Her daughter, born in Greece, introduced her own daughters—just 3 and 6 years old—to baklava, and now it’s their favorite treat. I loved hearing her family story about how baklava has made a difference in their three generations. We laughed and agreed that we were both glad she needed to call to fix the shipping address because we enjoyed our conversation so much.

Another customer, Krista came by on Thursday to pick up baklava with her 11-year-old daughter Hope. The occasion? It was sweet Hope’s birthday. The birthday girl had saved my business card from last June because her mom promised to buy her baklava for her birthday. She arrived in the cutest birthday sash, excited as could be. I gave her a mini tour of the bakery, treated her to a sample, had wonderful conversation about her talents and hobbies (which, of course, baking is one of them) and sent her off with her baklava gift from mom and a few extra goodies from me. Her joy was contagious.

These are the moments that remind me why I do what I do. With everything going on in the world, I’ve stopped watching the news as much. Instead, I make my own news. Good news. Sweet news. Stories like these, that I get to share with you.

So here I am—Rita Roberts Magalde—reporting LIVE from Sheer Ambrosia Bakery, where love, laughter, and layers of phyllo come together to create something truly special.

Thank you for letting me be part of your lives. And thank you, as always, for being part of mine.

With a full heart,

Rita

Sheer Ambrosia, Tango, and the Dance of Balance

Me with Chris demoing for the class

Thank you Chris and Sofe for donating your time to our American Heart Association Fundraiser and for rekindling my tango flame. And thank you Brittany from Sugar Space for donating the venue!

Running Sheer Ambrosia is truly one of the greatest joys of my life. It’s my heart, my purpose, and my livelihood. But if I’m honest, it’s also been, for many years, the only thing I do. Somewhere along the way, I convinced myself that it had to be that way—that pouring every last ounce of myself into the business was the only way to succeed. But something changed recently, and I want to share it with you.

In my last newsletter, I told you about a remarkable group of women I’m working with, led by the amazing Dr. Sidni Shorter, to raise money for the American Heart Association. Since I couldn’t bake my way to fundraising success (the AHA has a no-sweets policy!), I reached out to an old friend with a different kind of talent—and together, we hosted a tango class.

Yes—Argentine Tango.

Some of you may not know this, but tango was once a huge part of my life. My love affair with the dance began back in 1999, when I was pregnant with my son Leo. I was on bed rest after a previous miscarriage, and I spent my days reading, watching movies, and trying to stay hopeful. One afternoon, I stumbled across a foreign film called The Tango Lesson. It was beautifully filmed in London, Paris, and Buenos Aires and told the story of a woman falling in love with tango and the teacher who taught her to dance...Pablo Veron. I was mesmerized. Bedridden, I longed to move, to dance, to feel that kind of freedom in my body.

Fast forward years later to October 2006—a friend invited me to a local tango dance, and everything came flooding back. That movie, that feeling, that longing. I was hooked. I dove in headfirst, dancing every chance I got. When I wasn’t working or mothering, I was at a tango class or a milonga (that’s what tango dance nights are called). By December of that year, I was in Buenos Aires dancing the nights away, completely immersed in the world of tango. I even had the opportunity to meet Mr. Pablo Veron himself (who was in town from Paris) and take a private lesson of my own with him at his family home. Talk about full circle!!!

But as Sheer Ambrosia began to grow, tango slowly faded into the background. The bakery demanded more of my time and energy, and I gave it—willingly. Then the pandemic hit, and like so many things, tango disappeared altogether. Close contact dancing was off the table, and I couldn’t risk getting sick—I had a business to run and people depending on me.

Since then, I’ve told myself there just wasn’t time. No room in the schedule for dancing.

Until this past Tuesday.

As part of our fundraiser, I dusted off my old tango shoes, slipped them on, and took to the floor with my dear friend Chris. And would you believe it? My body remembered. The music started, and just like that, I was gliding across the floor, feeling more alive than I have in a long time.

In that moment, I realized how much I had missed it. How much I had been missing.

Don’t get me wrong—I love my work. I love the bakery. But it hit me that there’s room in my life for more than just work. There has to be. I can love my business without letting it consume me. I can feed others with sweet, flaky baklava and also nourish my own soul with dance.

So here’s to making space for joy, for movement, for music. Here’s to the reminder that our passions can coexist. That it’s not selfish to make time for the things that light us up—it’s necessary.

Sheer Ambrosia is my heart. But tango is my rhythm. And I think it’s time to dance again.

With love and a twirl,

Rita

Me and My Kiddos (Leo and Sofia) A Couple of Years Ago On Thanksgiving

Losing the Contest, Winning the Mission: How Sheer Ambrosia Keeps Rising

As many of you know, I spent a good part of January and the entire month of February trying to win the title of Entrepreneur of Impact, a contest where the last person standing would receive a $25,000 check, a mentorship with Daymond John, and a feature in Forbes Magazine.

At first, I thought I was simply applying for a grant. Before I knew it, I had entered a competition where votes determined the winner—one free vote per person per day, or purchased votes at $1 each, with occasional double-vote days for extra impact.

When I read the rules and realized what I had gotten myself into, my gut told me to walk away. Running a business is already a marathon—did I really want to spend three months rallying for votes? I worried about how repeatedly asking people to support me might impact my brand. But the lure was strong. $25,000. Daymond John. Forbes.

I asked three trusted friends for advice, and they all said the same thing: "Go for it!" So, I did. I made it through round after round, week after week. I created videos, posted on social media, and reached out to my family, customers, friends, and colleagues. Even my children got involved.

Then came the quarterfinals on February 27th—the most grueling, stressful day of this journey. For weeks, I had been in first place every morning. But on the day it really mattered, I woke up to find myself in second. I sprang into action. I reached out to those who had promised to help if I dropped below #1. They delivered, purchasing votes and pushing me back to the top.

A few hours later, I checked again—second place. Then third.

More calls. More texts. More appeals. It was a battle. I barely ate. At a Chamber of Commerce meeting that evening, I kept checking my phone. Just one more hour. Just hold on. Then, with 30 minutes to go, two other contestants overtook me.

My son threw in $50, then another $50, then $100. His friends joined in. A dear friend at the Chamber meeting put in $250. Nothing. Still second. Minutes later, it was over.

I lost.

I left the Chamber meeting in tears. No $25,000. No Daymond John mentorship. No Forbes feature for Sheer Ambrosia.

But as I drove home, I remembered something—a 5-star Google review from a new customer named Elizabeth that I had received that very day. She wrote:

“I attended an event recently that catered the BEST baklava I’ve ever had. Unfortunately, there wasn’t a business sticker on the container, so I made it my mission to find out who made them so I could support their business. After an extensive Google search and speaking with Rita, I found out she was the amazing mystery baker! Not only is she an incredible baker, but she is an amazing person as well. She took me in, even though she was closed for the day and on a Zoom call. I bought a box of 12, and I’m eating them with my husband as I type this. He doesn’t even like baklava—but ‘Sheer Ambrosia Bakery’ has converted him! Do yourself a favor and buy a box as well. Thank you, Rita, for being so sweet. I will be a returning customer!”

THIS was my win. Happy customers who love what I do—this is what truly matters. Elizabeth loved my baklava so much she made it her mission to find me. Her husband, who never liked baklava, is now a fan. This is why I do what I do.

Now, don’t get me wrong—I wanted that money. Desperately. Times are lean at the bakery. When I co-owned my travel agency years ago, I never had to worry about paying bills. Now? Every month is a challenge. I miss vacations. I miss owning a home. But I made this choice. I could go get a higher-paying job—I’m educated, experienced, bilingual. But I don’t want to. I want to build Sheer Ambrosia Bakery into the multi-million-dollar business it deserves to be. And I will!

Oh...and guess what? I already am an Entrepreneur of Impact. I’m a Black woman making amazing baklava in Utah. I started with zero customers, no brand, no bakery, no concept—nothing. Today, I have my very own commercial bakery and I sell over $150,000 worth of baklava a year with just myself and a part-time employee. Fourteen stores carry my products. And I have two incredible children who believe in me.

My daughter’s text the night I lost said it all:

“I’m so sorry about how things turned out with the competition. I know how much it meant to you, and I never want you to feel let down. I truly admire your effort and dedication, and I hope you know that you’re always a winner in my eyes. I love you so much, and I’m here for you no matter what.”

My son believes in me so much, he spent more money than he should have trying to help me win. They’ve seen me work until I’ve fallen asleep standing up. They’ve seen my legs swell up from exhaustion during the holidays. They believe in me. So why did I shed even one tear?

My daughter later said something else that stuck with me:

“Mom, there will be other opportunities for you to prove your worth.”

She’s right. And honestly, this contest was flawed. A true Entrepreneur of Impact isn’t determined by how many votes people can buy. It’s about the impact they have on their community, their customers, and their family. And I have that.

The day after the contest, I shared my latest review with one of my mentors, Dr. Sidni L. Shorter. Her response?

“That’s great, Rita… but what I see here is a missed opportunity. Girl, you need to make sure that EVERY piece of baklava that leaves your bakery has your name on it.”

She was right. I called my wholesale clients, and every single one agreed to let me put my Sheer Ambrosia sticker on their boxes. Now, people will know whose baklava they are enjoying and where to find more.

So, what now? Now that I’m no longer distracted by a contest, I can do what I do best: move my business forward. Get laser-focused on growth. Master the art of marketing. Win more customers like Elizabeth. And when the next legitimate opportunity comes along, I’ll be ready.

****A HEARTFELT THANK YOU TO EACH AND EVERY ONE OF YOU WHO SUPPORTED ME WITH YOUR VOTES (PAID AND UNPAID) DURING THIS CONTEST. I AM DEEPLY GRATEFUL FOR YOUR KINDNESS AND ENCOURAGEMENT. ONE OF THE GREATEST LESSONS I’VE TAKEN FROM THIS EXPERIENCE IS SEEING JUST HOW FAR SOME OF YOU WERE WILLING TO GO TO STAND BY ME. YOUR SUPPORT DID NOT GO UNNOTICED, AND I APPRECIATE YOU MORE THAN WORDS CAN SAY. THANK YOU, THANK YOU, THANK YOU!****

Celebrating Black History Month: Honoring a Trailblazing

Black Baker

Above: Malinda Russell's self-published cookbook titled: A Domestic Cookbook: Containing a Careful Selection of Useful Receipts for the Kitchen.

As we celebrate Black History Month, I want to take a moment to honor the incredible contributions of Black entrepreneurs in the baking industry—pioneers whose talents and determination paved the way for businesses like Sheer Ambrosia Bakery to thrive today. One such trailblazer is Malinda Russell, the first known Black woman to publish a cookbook in America.

Malinda Russell: A Culinary Pioneer

Born in Tennessee in 1820, Malinda Russell was a free Black woman who built a remarkable career in baking and entrepreneurship despite the challenges of her time. She initially planned to travel to Liberia as part of the colonization movement, but after being robbed along the way, she had to abandon her journey and find a new path. Turning to her love of baking, she opened a pastry shop in Virginia and became known for her exceptional cakes, pies, and breads.

In 1866, she published A Domestic Cookbook: Containing a Careful Selection of Useful Receipts for the Kitchen, making history as the first known African American woman to write and publish a cookbook. Unlike many cookbooks of her time, Russell’s focused on refined cooking and baking rather than simple, labor-intensive meals, showcasing her expertise in pastry arts. Her recipes, rich with European influences, revealed a sophisticated approach to baking and reflected the culinary excellence of Black chefs and bakers in the 19th century.

Why Malinda Russell’s Legacy Matters

Malinda Russell’s story is one of resilience, innovation, and passion. At a time when opportunities for Black women in business were scarce, she carved out a space for herself and shared her knowledge with the world. Her cookbook serves as both a historical artifact and an inspiration, proving that Black bakers have long played a crucial role in shaping American culinary traditions.

At Sheer Ambrosia Bakery, I stand on the shoulders of pioneers like Malinda Russell—women who believed in the power of their craft and pursued their dreams despite the odds. Her legacy reminds us that our talents and passions can create lasting impact, not just for ourselves, but for future generations.

This Black History Month, I invite you to celebrate the contributions of Black chefs, bakers, and entrepreneurs—past and present—who have enriched our culture with their artistry and determination. And, of course, what better way to honor history than by sharing a delicious treat with loved ones.

Be Part of Our Success Story: Vote for Sheer Ambrosia in the Entrepreneur of Impact Contest!

VOTING IS OPEN NOW!

As many of you know, entrepreneurship has been the heart of my journey throughout my adult life. From starting my first venture as a mortgage broker, to ten incredible years as the owner of a thriving travel agency, and now spending the last 17 years slowly growing Sheer Ambrosia Bakery while raising my children as a single mom, this path has been a labor of love. It hasn’t always been easy—I’ve taken on second jobs to make ends meet—but every moment has been worth it.

Now that my kids have grown and started their own journeys, I’ve been able to pour even more energy into Sheer Ambrosia. Since 2023, I’ve made significant strides: I built out a new commercial kitchen, graduated from the Goldman Sachs 10,000 Small Businesses program, hired my first non-seasonal employee, and earned certifications as a woman- and minority-owned business, as well as the ACDBE certification, paving the way for my baklava to be sold in airports. In 2024, I was honored to receive the Inaugural Business of the Year award from the Utah Black Chamber of Commerce. Sheer Ambrosia has been featured on multiple daytime TV shows, made its debut on the cover of Utah Business magazine, and has been spotlighted on NPR’s Marketplace 11 times! These milestones are just the beginning—I’m determined to keep climbing until we reach the very top.

Recently, I applied for the Entrepreneur of Impact contest on social media, and I need your help. The prize is incredible: $25,000 in cash, which would be a game-changer for my business, a feature in Forbes magazine, and a one-on-one mentoring session with Daymond John from Shark Tank.

This contest depends on votes, and I’m reaching out with all my heart to ask for yours. If you’ve ever believed in me, in Sheer Ambrosia, or in my story, please cast your vote. Be part of my “why.” I started this business during one of the hardest times in my life, as a way to rebuild for myself and my family.

Sheer Ambrosia is more than a bakery. It’s about love—love for baking, love for different cultures, love for people, and love for the journey that brought me here. It’s about blending the flavors of my Southern roots with the Mediterranean traditions I’ve come to adore and sharing that fusion with the world.

I’m inviting you to be part of this next chapter in my journey. With your support, I can continue to grow Sheer Ambrosia and share my vision of baklava with the world. Please vote for me, Sherrita “Rita” Magalde, and Sheer Ambrosia Bakery.

Click on the teal button below to cast your vote. You can vote once everyday until the contest ends.

Thank you from the bottom of my heart for being part of this incredible adventure. Let’s keep climbing together!

Reflecting on a Sweet and Successful Holiday Season...

THANK YOU!

January 3rd: Me, Rita, taking a moment to

breathe and reflect. We took care of everyone,

and not a single complaint—what a relief!

The holiday season was an incredible success, and I couldn’t be more grateful! For the first time in 16 years, I had someone help me make baklava during the holiday rush. Meena, my amazing part-time worker, stepped in on her days off and weekends, and her support was truly a blessing—she’s an absolute gem!

The season started strong with Thanksgiving, and things kicked into high gear afterward. Late nights became the norm, with many nights stretching past midnight and even a few where I worked straight through until 4:00 a.m. On two Sundays, I didn’t go home at all, powering through to ensure every order was perfect.

Despite the demanding schedule, I was thrilled to see so many loyal, repeat customers return for their holiday baklava, even those I hadn’t seen in months. It was also heartening to welcome plenty of walk-in customers, a sign that Sheer Ambrosia’s presence in the community continues to grow.

And then there’s Desi… On Wednesday, December 18th, she stepped in and worked tirelessly, all day and through the night, to help me get the final big batch of orders out before the post office’s December 19th deadline. Thanks to her dedication, we ensured that everyone outside of Utah received their baklava in time for Christmas. I’m constantly amazed by her willingness to work so hard for a business that isn’t even her own.

Now that the holiday rush is over, things have slowed down—as they often do in January. I try not to worry too much since this is the time when many focus on New Year’s resolutions. Instead, I’m using this downtime to strategize and plan for an exciting year ahead.

I want to take this moment to thank you all from the bottom of my heart for your orders, your patience, and your support throughout the season. I am beyond grateful and hope you and your loved ones enjoyed every bite of your treats. Here’s to a sweet and successful 2025! 💛

Honoring NPR Marketplace:

A Lifeline for

Sheer Ambrosia

I never miss the chance to ask new customers how they heard about Sheer Ambrosia, and over the holiday season, I had plenty of opportunities. Many of you told me you discovered us through one of my interviews on NPR's Marketplace with Kai Ryssdal. Some even mentioned you’d only caught the most recent episode and hadn’t heard the others. That inspired me to compile all 10 of my appearances and create a dedicated page on my website so you can listen to them anytime.

Marketplace has been so generous, featuring me 10 times since 2020, and I have to say—I wouldn’t have met many of you without them. Even some of my local customers first heard about Sheer Ambrosia through Marketplace. Their support has been nothing short of life-changing, and I’m beyond grateful for the opportunities they’ve given me to share my story.

Before the pandemic, I tried countless forms of marketing in my local community—flyers, events, ads—but most of it didn’t lead to major sales. The challenge was that so many people locally don’t know what baklava is. It felt like no matter how much effort I put into spreading the word, it was difficult to make a meaningful impact.

When Marketplace first called me in 2020, it felt like a miracle. It was the height of the pandemic, and things were incredibly uncertain. My wholesale clients had shut their doors, and demand for baklava had completely dried up. I had two kids to support—one in college and one in private school—and no income coming in. I ran out and secured a second job as an office manager just to keep afloat. Then, in June of that year, everything changed. Marketplace aired my story, and YOU ALL came through for me, placing orders and keeping my business alive.

Their interest in my journey and their desire to help me not just bounce back but thrive has changed the trajectory of my life and my bakery. I cannot stress enough how important they have been to Sheer Ambrosia’s growth. As I sit here writing this, I’m overcome with gratitude, reflecting on how much this partnership has meant to me.

If you’d like to hear more about my journey, I invite you to check out the new, dedicated page on my website with all 10 Marketplace episodes. Thank you for being part of this incredible journey—I couldn’t have done it without you or the Marketplace team. 💛

Always Prepared: The Perfect Gift for Any Occasion

***This is a repeat article, but I’m sharing it again in hopes of inspiring you to support us year-round, just as the article above encourages.***

-Thank you-

I have a wonderful customer, friend, and mentor, Jeff Davis, who absolutely loves my baklava. Jeff is a professor at the University of Utah's David Eccles School of Business and is one of my biggest fans. He also considers himself quite the baklava connoisseur having lived in Europe for years. For the past few years, he has been purchasing between 10 and 20 four-piece boxes of baklava at a time, which he freezes. While Jeff and his family enjoy the baklava themselves, he also has a generous heart and likes to keep a supply on hand to give as gifts. Whether it's for a neighbor's birthday, an unexpected visit, a dinner party, or just to share a little love, Jeff is always prepared with these beautiful, edible tokens of appreciation. It's the perfect gift: a unique, gourmet treat that doesn’t break the bank.

A few weeks ago, Jeff stopped by to pick up 20 boxes, and I decided to do something special for him. I created a personalized gift tag for his family, adding “Gifted by The Davis Family” to give it an extra touch of customization. He was thrilled with this special detail!

How often have you wished you had a special gift ready at your fingertips? How many times have you needed something unique but didn't have time to run out and get it? How often have you wished you knew in advance that you'd need a gift for a friend or neighbor? Or simply wanted to brighten someone's day with a meaningful gesture?

Let me help you be prepared for those moments. If you order at least one bundle of 10 four-piece boxes, I am happy to personalize a tag just for you. Follow the link below to order your Ten 4pc Box Bundle today, and we’ll reach out to you to discuss your special tag. When they arrive, just pop them in your freezer, and they’ll be ready whenever you need them—no last-minute store runs required.

Behind the Scenes at

Sheer Ambrosia:

When Challenges Arise, We Rise

The hallway right behind Sheer Ambrosia. The bright yellow fire retardant/powder from the fire extinguisher coated the floors, the walls, and the ceiling, penetrating my bakery.

I usually write to you about all the amazing things happening at Sheer Ambrosia—our accomplishments, milestones, and the exciting steps we’re taking to grow this business. But today, I want to pull back the curtain and share a side of entrepreneurship that doesn’t always get the spotlight. Because while building this bakery has been a labor of love, it definitely isn't always sunshine and rainbows.

A few weeks ago, I experienced one of the most challenging setbacks since moving into my new commercial bakery. Here’s what happened:

For the past several months, I have been working long hours planning and preparing for a huge three-day event called The Family Christmas Gift Show taking place at one of Utah largest venues, The Mountain America Exposition Center. Late Tuesday night, on November 12, two days before the first day of the event, I left the bakery after pulling the last of 13 pans of baklava from the oven to cool. Part of that was for the event, another 80 pieces was a donation to Habitat for Humanity the next morning, as I just joined their board and wanted to make a good impression at a big event they were having, and then some was for regular clients. When I returned early the next morning, I walked into what can only be described as a scene from a disaster movie.

My bakery is located in a mixed-use building with commercial units in the front and residential low income apartments behind. While I’ve formed good relationships with many of the residents, the building has its challenges, including a mix of mental health crises, substance abuse issues, and other unfortunate situations.

That night, one of its troubled tenants allowed two homeless men into the building. A fight broke out, and one of the men took a fire extinguisher off the wall, smashing it into the floor. The extinguisher exploded, covering the hallway in a thick layer of yellow fire-retardant powder. Worse, the powder found its way into my bakery through cracks in the door and air ventilation system.

I had to throw away all the baklava, about $2,000 worth, scrub every inch of the bakery, and start over from scratch. It was all hands on deck and what followed was a whirlwind of cleaning, remaking, baking, and cutting samples late into the night to be ready for the Christmas show event the next day. I was so embarrassed to call Habitat for Humanity and tell the CEO that I couldn’t follow through on what I’d promised her, but she was more concerned for me. She was even one of the incredible friends who came to help me late into the night to cut samples for the first day of the show the following day.

Beyond the immediate cleanup, I had to file an insurance claim, report the incident to the Department of Agriculture and Food, and consult with poison control and the fire department to ensure the bakery was safe. The property manager is taking steps to address the situation, and I’m working on doing what I can to prevent anything like this from happening again.

But that wasn’t the end of the hurdles. Shortly after this incident, another significant setback hit—that three day Christmas gift show...well, let's just say it was a huge learning experience in knowing who my clients are.

Through it all, I’m continuing to appreciate that running a small business means facing the unexpected head-on. It’s about perseverance, problem-solving, and refusing to let obstacles define my journey.

To my incredible customers: I share this not for sympathy, but to give you a fuller picture of what it takes to bring Sheer Ambrosia’s baklava to your table. Every piece of baklava we create is the result of resilience, hard work, and an unwavering commitment to quality.

Your support means everything. When you choose Sheer Ambrosia, you’re not just purchasing baklava; you’re supporting a dream, a small business, and a whole lot of heart.

Thank you for being part of this journey, through the ups and the downs.

Expanding the Sweet Experience: Sheer Ambrosia’s New Offerings

I am excited to announce that Sheer Ambrosia is expanding its range of delectable treats! While our signature baklava, with its 14 delicious flavors, will always remain a favorite, our new, larger kitchen has allowed us to introduce even more delightful creations. Although new to the Sheer Ambrosia menu, these products have been cherished recipes of mine for years—each perfected over time. After months of refining the packaging, portion sizes, and presentation, I'm thrilled to finally share them with you.

To enhance your Sheer Ambrosia experience, we’ve also partnered with local artisans and suppliers to bring you a variety of complementary items. Our expanded lineup now includes carefully curated teas, coffee, hot chocolate, candles, aprons, and branded mugs. These new additions will be showcased in our 2025 calendar, titled Baklava and Beyond: Savor the New Flavors of Sheer Ambrosia, and are being added to our website.

One of the highlights of this expansion is our beautifully crafted HOLIDAY GIFT CRATE, blending our beloved baklava with the new items. Made from pine wood by a local carpenter, each crate includes:

  • 1 12-piece box of Traditional Honey Walnut Baklava
  • 1 lb. bag of Earthy Endeavors: Rita's Amazing Granola, a Sheer Ambrosia Original
  • 1 lb. bag of Leo's Finest Premium House Blend Coffee with cinnamon notes (sourced from a top local roaster)
  • 1 tin of tea (sourced from a top-tier tea connoisseur)
  • 1 tin of hot chocolate (sourced from a Honduran-American woman-owned business passionate about quality chocolate)
  • 5 loaded chocolate chip cookies (Sheer Ambrosia Original)
  • 5 ginger snap cookies (Sheer Ambrosia Original)
  • 5 Greek butter cookies (Kourabiedes) made with my cherished 35-year-old recipe
  • 1 chocolate hazelnut biscotti (Sheer Ambrosia Original)
  • 1 classic almond biscotti (Sheer Ambrosia Original)
  • 1 branded apron in our signature colors
  • 1 candle from a local woman-owned candle company
  • 2 mugs featuring the Sheer Ambrosia logo
  • 1 2025 calendar created with the help of a talented local photographer and an amazing stylist—special thanks to Jason West and Alex Bingham!
  • To hold all the goodies, 1 handcrafted pine crate made by Black Horn Creations, another local artisan!

If you're looking for the ideal holiday gift for that foodie friend, colleague, client, or family member who seems to have everything, your search stops here! Sheer Ambrosia has meticulously curated a gift crate designed to delight the senses of any food lover. Every item has been carefully selected for its exceptional quality—only the finest made the cut. I hope these new treats bring as much joy to you and your loved ones as I’ve experienced in creating and choosing them. This is more than just a gift—it's an unforgettable experience that any foodie will cherish!

The crate is priced at $250, and we anticipate selling out quickly, as we can only create 150 of them this holiday season. If you're interested in purchasing, please call or email us to get on the list for however many you'd like.

Visit our website to explore our full range of offerings. Below, you’ll find a sneak peek of some of our new products along with their descriptions. We’re working on securing the best shipping options for these delightful treats, but local customers can always purchase and pick up directly from our bakery.

Earthy Endeavors – Rita’s Amazing Granola

Get ready to taste the best granola you've ever had! Our Earthy Endeavors Granola strikes the perfect balance of flavors and textures, packed with all the good stuff. We start with hearty oats, then mix in a generous helping of almonds and pecans. The “earthy” flavor comes from pure organic maple syrup, organic coconut oil, and brown sugar, with just the right touch of vanilla and dried fruit for a delightful finish.

It’s the ideal breakfast when paired with your favorite milk or as a topping for Greek yogurt with a drizzle of honey. Whether you enjoy it in the morning or as a snack, it’s bound to become your go-to. And the best part? It’s made fresh in-house at Sheer Ambrosia Bakery.

Gourmet Ginger Snaps

The "snap" in these delicious cookies is all about the flavor! We’ve added a hint of black pepper, ground ginger, and clove to create a bold, spiced treat that excites your taste buds, not your teeth. Soft with just the right amount of crunch, they offer the perfect balance of texture while delivering those cozy, fall-inspired flavors. If you're looking for an elevated version of the ginger snap cookies you loved as a child, these are the ones. Indulge in this delightful, nostalgic treat—you won’t be disappointed!

Kourabiedes – Greek Butter Cookies

Affectionately named Sofia’s Snowballs after my daughter, these traditional Greek holiday cookies hold a special place in my heart as they were the first Greek dessert I ever learned to make. Kourabiedes are buttery, crumbly, and perfectly sweet without being too sugary, despite their generous coating of powdered sugar. While there are countless variations of this cookie, I’ve remained faithful to the recipe I learned over 35 years ago. Filled with toasted walnuts, these cookies offer a rich, earthy goodness—a true taste of Greece, and now a tribute to my daughter, Sofia.

From Home Kitchen to Commercial Bakery: Sheer Ambrosia's Bold Leap & Exciting Milestones Throughout 2024

Me, Rita Magalde, Founder and CEO standing proudly in front of my bakery.

This year has been nothing short of a whirlwind since I received my certificate of occupancy on January 9th and officially opened the doors to Sheer Ambrosia’s new commercial bakery. Moving the business out of my home kitchen has been a huge challenge but also a game-changing decision. I’ve always believed that the biggest rewards come from taking risks, and playing small has never been my style. Now, as I reflect on the past months, it’s clearer than ever that this bold step—though nerve-wracking because of the debt involved—has been absolutely worth it.

Since relocating, I've worked hard to expand and elevate Sheer Ambrosia. One of the most significant milestones has been securing three key certifications: Minority-Owned Business [received], Woman-Owned Business [should have this one in hand soon], and the coveted ACDBE (Airport Concessions Disadvantaged Business Enterprise) certification [received] which is a program run by the Department of Transportation (DOT) to help small businesses compete for airport contracting opportunities.

These accreditations required loads of paperwork, site visits, and interviews spanning months, but I’m thrilled to have received two out of three with the third on the way! The ACDBE certification, in particular, opens up the possibility of selling my baklava in airports nationwide, giving Sheer Ambrosia a place at the table that previously seemed out of reach for small businesses like mine. None of this would have been possible if I had still been operating from home.

Additionally, I’ve been fortunate to receive two grants since moving into the new space. One of them is covering my rent for six months—thanks to Dr. Sidni Shorter for pointing me to this opportunity. The other grant, valued at $10,000, will be used to create a marketing video for Sheer Ambrosia. A special thank you to Steve Williams a friend and employee at Spy Hop - Film, Audio, Music, Design for sharing this application. I’ve already met with the production team, and we’re brainstorming to craft an ad that will build incredible momentum for the brand.

Sheer Ambrosia is also set to be featured on the cover of the November issue of Utah Business Magazine alongside two other local businesses, thanks to our holiday gift offerings. This feature will spotlight our companies because of our beautiful and thoughtful gift options for the upcoming season, and I’m honored that Sheer Ambrosia made the cut.

Expanding our wholesale business has been another exciting development, with three new locations added to our partnerships: two Alpha Coffee shops and one Hyatt Place hotel. Being able to partner with other local businesses and seeing our products in more locations has been a dream come true.

I’m also grateful for the support from the Salt Lake Chamber. Joining the Chamber has brought many new opportunities, including a feature on their “Speaking on Business” podcast, which aired on our local KSL radio station during the morning and evening commutes. It was a great way to reach more people and share the Sheer Ambrosia story.

One of the most fulfilling aspects of this journey has been my recent appointment to the board of Habitat for Humanity in Salt Lake City. This is a cause close to my heart, and it’s a chance to give back to the community in a meaningful way. It’s a reminder that you don’t have to have everything figured out to be of service. While I’m still in the trenches building my own legacy, I’m committed to helping others find stability and community through affordable housing. I’m excited to work alongside its CEO, Carin Crowe and her incredible team and use my skills to make a difference. Thank you Carin for recognizing that although I don't have deep pockets, I still can add lots of value to Habitat for Humanity.

These are just a few highlights of what has been an incredible year. Yes, I’m still nervous—debt is always daunting, and I don’t have a safety net if things don’t go as planned. But I’m certain that none of these blessings would have come to fruition if I hadn’t taken the leap to move out of my home kitchen and into a commercial space. I’m going to keep pushing forward, working hard to bake the best treats possible, while collaborating with passionate people who share my love for baking. I’ll continue filling out grant applications, submitting proposals, and attending events that help Sheer Ambrosia grow.

Ultimately, I love what I do, I love who I work with, and I love who I work for. You—my baklava family—are the reason I’m here, and I can’t wait to see where this journey takes us next. Together, we will continue to grow Sheer Ambrosia, one delicious pastry at a time.

A Surprising Honor at the Inaugural Black Wealth Conference

First Ever Black Wealth Conference in Utah

Dr. Sidni Lloyd-Shorter, President & CEO of the Utah Black Chamber of Commerce, me, and Ashley D. Bell, President of Redemption Holding.

Back on August 14th, I shared this on social media, but for those who missed it, I have to tell you about an incredible surprise I received. I had the privilege of attending Salt Lake City’s inaugural Black Wealth Conference, hosted by the Utah Black Chamber of Commerce. The event was filled with inspiring speakers, innovative ideas, strategic insights, and engaging discussions. It brought together a diverse group of people, all eager to learn strategies for improving their financial futures. I left the conference feeling uplifted, motivated, and supported by my community.

I had the opportunity to meet many incredible people and contribute my own efforts to support the cause. On the evening of the first day, I was scheduled to set up a booth to sell my baklava, which meant I had to leave a bit early to pick up inventory and set up my tent. But just before I left, I received a thrilling surprise—I was announced as one of three recipients of a generous $5,000 prize to be deposited into the new Black-owned bank coming to Utah, Redemption Holding! As the winners were called up to receive our awards, the bank’s president, Ashley D. Bell, revealed that once the bank officially opens, our $5,000 in shares would quadruple. I was overwhelmed with gratitude and couldn’t hold back my tears of joy. Even months later, I still get emotional thinking about that moment.

I owe a huge thank you to Dr. Sidni Lloyd-Shorter and the Utah Black Chamber for organizing such a brilliant wealth conference—you never disappoint! My appreciation also goes out to all the speakers, panelists, emcee Christopher J. McKinley, Jr., facilitators, planners, helpers, and attendees who helped create such a powerful, positive synergy. Together, we are building a stronger, more prosperous future.

Another Sneak Peek Photo of What's Coming to Sheer Ambrosia's Menu:

Sweet Sofia’s Hazelnut and Almond Biscotti

As a lover of old-world cookies, adding biscotti to my menu was a must. I started making them over 11 years ago and have perfected more than a dozen recipes since. Today, I’m offering two of my top flavors: Chocolate Hazelnut and Almond. True to their name, these twice-baked treats are perfect for dunking into your favorite hot beverage. With the classic European flavors of hazelnut and almond, they offer a subtle sweetness that makes them the ideal snack to have on hand for any time of day.

Final Message: If You Are Local...Join Me This Friday in Salt Lake! I'll Be the Guest Speaker.
